I had to scour the internet sifting through blueberry bread recipes to finally decide what I liked the most. It always seems I just combine ideas I like from recipes until I create a final recipe. This recipe did not disappoint with fresh blueberries folded into the bread batter, it was light and tangy but still had a dense feel of a cake. It was a sweet treate on a hot summer night and I could easily see some of us (me) wanting this for breakfast in the morning. Maybe even a muffin? The crunch of some of the edges was really delightful…. maybe it will be a muffin!
Lemon Blueberry Bread
Ingredients
- 1.5 cups all purpose flour
- 1 tsp baking powder
- 1 tsp salt
- 1/3 cup unsalted butter see notes if not available
- 1 cup sugar
- 2 eggs room temp, if you remember
- 3/4 tsp vanilla
- 2 Tbsp lemon juice fresh, if you have it
- 1/2 cup milk
- 1 cup blueberries fresh, if you have it
- 1 Tbsp all purpose flour separate from 1 1/2 cups above
Glaze
- 2 Tbsp butter melted
- 1/2 cup powdered sugar see notes
- 2 Tbsp lemon juice
- 1/2 tsp vanilla extract
Instructions
- Preheat the oven 350 degrees
- Mix flour, baking powder and salt. If you have SALTED BUTTER see notes.
- In a separate bowls mix melted butter, sugar, eggs, vanilla, and juice.
- Combine flour into wet ingredients half at a time mixing just until incorporated.
- In your original empty dry bowl, pour your tablespoon of flour onto the blueberries and coat well. This helps them from sinking to the bottom.
- Fold the blueberries into the batter, just until incorporated again.
- Pour into a greased or lined pan
- Bake for 45-55 minutes (start checking it at 40 minutes) when your toothpick is clear, its done.
- Allow the loaf to cool IN THE PAN for about 40 minutes
- Then put on a baker's rack to completely come down to room temp
- Mix glaze ingredients and drizzle over the loaf. If you add glaze before the bread is cool, it will melt and run.
- Slice it up and enjoy!
Notes
If you only have salted butter, no worries just SKIP the salt above and added the butter as normal.
Fresh berries are always better, but frozen will work too!
