I’m trying really hard to make our delivery app go extinct at our house, I mean you saw the latest recipes right? Smash burgers, chicken gyros, and now beef & broccoli when I’m craving some Chinese takeout? And in true Valerie-form, I’ve got you making this for the fam in under 30 minutes.
Easy 30 Minute Beef & Broccoli
Ingredients
- 1 lb thinly sliced beef use what you have, here I used a think eye of round that my horrible delivery app picked for me when I wanted cubed steak
- 1 crown broccoli I used a bag of steamed broccoli
Marinade
- 1 Tbsp soy sauce
- 1 Tbsp DARK soy sauce optional, if you have it only. I did not
- 1 Tbsp Shaoxing wine optional, if you have it. I was out.
- 1 Tbsp minced garlic
- 1/2 Tbsp baking soda see notes
- 1/2 tsp white pepper black pepper works fine too
Sauce
- 1 Tbsp soy sauce
- 1 Tbsp dark soy sauce optional, if you have it only. I did not
- 1 Tbsp Shaoxing wine optional, if you have it. I was out.
- 1 Tbsp minced garlic
- 1 Tbsp corn starch
- 5 Tbsp water
Instructions
- If you're making a quick batch of rice, start your rice first. If you're doing an instant rice, hold off for now.
- Slice your beef against the grain.
- Place beef in a bowl
- Make your marinade, and mix into beef bowl
- Make your sauce in a separate bowl, and set aside.
- Set aside in the fridge for 5-10 minutes while you get the other items ready
- If you're doing steamed broccoli like me, microwave it for only 2 minutes, not the full 5-6 the bag recommends. We just want enough time to get it mostly defrosted.
- Once its steamed, drain and set aside.
- If you're doing fresh broccoli, cut your crown into bite sized pieces. Keep the stem too, cause that's the best part!
- Boil the broccoli for just 3 minutes if you're doing fresh. Drain and set aside.
- If you're making another side like instant rice or noodles, start that now.
- Okay, we're on our last few steps.
- Heat up a large pan with about 1 Tbsp of oil (veggie, canola).
- The key is to have a nice and hot pan to fry your beef quickly.
- Once hot, pour in your beef and brown.
- Once its barely cooked through, add your broccoli
- Add your sauce, stirring often
- We just want to let the sauce heat with the beef and we're done. This really takes only 2 minutes.
- Serve with your side if you made one, and enjoy!
Notes
- Dark soy sauce is optional and adds a depth of flavor.
- Shaoxing wine is nice, but not always a common household ingredient, so don’t fret. You can use a splash of rice vinegar as well.
- People ask why baking soda? Baking soda helps tenderize the meat, and again, not required but helpful.
- Some enjoy a mild sesame flavor, you can vary it with adding sesame oil (about 1tsp)
- If you have sesame seeds, sprinkle on top when the dish is done. I forgot and the fam bam said that would have elevated the meal.
- You’ll see me taking shortcuts often, “lazy garlic” or “steamer bags”. This is the era I’m in with a toddler who is impatient and hungry. Shortly after we filmed, we gave the toddler an orange to hold her over and she was pleasant until we could plate her food.
