Baking pizzas with my family became more than just a meal—it is a treasured childhood memory. The taste of those homemade creations, the warmth of our togetherness, and the love that infused every bite continue to linger in my heart, reminding me of the joy that comes from simple moments shared with loved ones.
Now, with a one-year old, we’re still learning our groove and figuring out how to make a pleasing meal with a little running around. I’m counting down the days when she’s promoted from onlooker to active participant! For now, I’ve got these stellar quick pizza cupcakes that are both a crowd pleaser and toddler approved! They are a fast bake, and assembly is easy to pick up and go. You’ll have dinner in a matter of minutes, and most likely have most if not all of the ingredients already on hand!
Pizza Cupcakes
Ingredients
- 20-24 slices pepperoni
- 1 can biscuits
- 1 tsp basil
- 1 tbsp olive oil
- 1 cup mozzarella divided into two 1/2 cups
Instructions
- Preheat oven to 350
- Open can of biscuits, pull each biscuit apart and then cut each into four pieces
- Take a stack of pepperonis, let's say 20, and cut into fours as well
- Place both ingredients in bowl
- Add 1/2 cup of mozzarella cheese
- Drizzle about 1 tbsp olive oil
- Add basil
- Mix well
- Spray muffin pan heavily with your choice of cooking oil
- Divide ingredients into each muffin cup, top with more mozzarella
- Bake 10-14 minutes, watching for golden brown
- Remove from muffin tin and serve
