Shrimp Alfredo – keto version

I’m baaaacck, sorta. I’ve been in some uninspired vortex so here we go with some new stuff. I’m kinda on the keto wagon, or keto flintstone car or something. I was going for keto shrimp asparagus alfredo but the asparagus was SOGGY. We tried frozen asparagus, won’t try that again. Yikes. Other than this being simply not enough food- it was a crowd pleaser and done in 15 minutes. Win, win!
Sauté 1lb shrimp (that’s seasoned with salt pepper garlic and onion) in 2 tbsp butter (or ghee). Follow that by sautéing 2 cups of veggie of your choice in the same pan. Add 1 cup of heavy cream, and 1/3 cup of Parmesan and heat till it boils, stirring often. 💥 done!
