Broccoli Cheddar Soup

Ingredients
  

  • 1/3 diced onion
  • 3 cups broccoli
  • 1 cup carrot shredded
  • 2 cup broth vegetable or chicken
  • 1/4 cup butter
  • 2 cup heavy cream
  • 2 cup cheddar shredded
  • 1/4 cup flour all purpose, coconut or almond works

Instructions
 

  • Saute onion in butter for 5 minutes
  • Whisk flour in and cook 1 minute
  • Whisk in broth and cream
  • Add veggies, stir, add salt and pepper to your taste. Probably 1 tsp salt, 1/2 t pepper.
  • Bring to boil then simmer for 20 minutes
  • Take off heat and add cheddar, stirring to help incorporate cheddar
  • Serve warm! Top with a little cheddar to help cool it down.

Notes

I'm probably the odd man out, but I love the stem of broccoli. So you'll see I cut the entire broccoli and include all of it not just the florets. 
I enjoy this as a main dish in a bread bowl or paired with a really nice crusty baguette.
